Cheese.
I don't think many of you know this, but I work at a place that sells a lot of meat and cheese at our deli. (mostly because we sell at about half the price most other stores in the area sell it for)
..So anyway, today I was eating some Havarti cheese and suddenly wondered why I had never started a cheese thread on the ToO.
So my question to you all: What's your favorite kinds of cheese? Are there any you don't like?
I'll start by saying that I very much dislike swiss cheese. Never have liked it. My favorites list includes:
Cheddar (especially sharp cheddar, and smoked cheddar. )
Hot pepper cheeses (pepper jack, etc.)
Farmers cheese
Colby (at times. Some Colby is better than others.)
Havarti (just discovered that I love this today..)
Garlic cheese
Horseradish cheese
...I'm sure I'll think of more. Anyway, start posting your favorites!

Such hatred for swiss! I agree that the processed/sliced stuff is pretty bad but Emmentaler is absolutely delicious!
Anyway, I love cheese! My absolute favorite category of cheese is Stilton. And, of them, Shropshire Stilton tops the list. It's orange and smells like a rotten gym bag but the taste is beyond awesome. And strong!
Other than that, I enjoy goat cheese, cheddar (Australian, Wisconsin and New York being some of the best I've had) as well as most anything else. The only thing I really dislike is Velveeta/Kraft/American. But it's not really cheese anyhow, technically.
Also, sheep cheese is pretty great.

We sell a pretty good swiss (I.. think.), I just don't care for it. One of those things I've just never acquired a taste for. My boss loves it though. I like swiss. And that's my daughter's favorite.
I was about to utilize my cheese stash to make a quesadilla. Now I am so sad I do not currently have the pepper jack you all have in your cheese stash.
I am not a fan of blue cheese or other moldy cheeses. Not a fan of goat cheeses either. Too stinky.
Oh, and Costco for cheese is good. We bought an awesome wedge of Parmigiano-Reggiano for a super price. They had lots of other pretty kinds.
